Sorry for the late reply.
AMD Graphics is often a bit easier in use with regards to multi monitor setups than Nvidia is.
Intel Nuc’s however nice they are, will normally not support more than 3 screens to my knowledge, so please check that.
And no you cannot use Eyefinity or Nview on Intel Integrated graphics.
So for a setup with 4 screens i would not go for an Intel NUC.

Where you got that info that you can output 4k 60Hz 4:4:4 ?
please make sure to turn off all the scaling options the Receiver might have.
Please check if the HDMI Cable is HDMI2.0 / 18Gbps capable. The fact that it does 5.1 sounds over HDMI1.4 does not mean it also can doe 18Gbps …

With “normal graphics cards” i mean the ones sold in the distribution channel inteded for gaming and or normal office use. Professional graphics like Quadro cards often do not have limitations that the “normal graphics cards” have. Those limitation can also come from Operating System and driver software of course.
You can feed 4 screens in 1080p 60Hz of a single DP1.2 ouput, bandwidth wise that fits. I don’t think an operating system like Linux has any limitations with regards to the amount of screens connected. this leave the graphics card, but you shold check that with Nvidia, i have no experience with Quadro M4000 cards in such a setup.
i cannot help you with a EDID spoofer, but perhaps a program like CustomResolutionUtility CRU will give you other options than the Nvidia driver …

Please try setup first without the docking in between. Dockings often have many active chips inside that could be “in the way”.
When your screen can handle 3840×2160 at 60Hz in 4:4:4 the color depth needs to be 8 Bits BPC otherwise the signal get too big to send over HDMI2.0. Note: the 8 Bits BPC is not the same as the Color Bits Per Pixel (BPP).

Setups with TV’s normally work best by making a custom resolution, in this case for: 3840*2160 at 60 Hz with Timing Standard set to CVT-RB (Reduced Blanking ). Many LG TV’s also need to have features like “UHD Color” or “PC-Mode” manually set to “On” or “Enabled” for the HDMI 2.0 port in use. Please make sure the HDMI port of the Screen/TV supports 4K 60 Hz, often not all HDMI inputs support that.
Setting custom resolution in the Intel Grpahics Software shoudl be something like this:
Open Intel Graphics Control Panel, Chose “Custom Resolutions” (left bottom option). It will asks you if you wish to continue; YES.
Standard the “Basic” setting is shown, click on “Advanced”, check on left bottom if the correct screen is selected, Fill in; Width 3840 ; Height 2160 ; Refresh Rate 60 ; Timing Standard CVT-RB for use with TV (and for use with Monitor you can leave that on “Auto”); and click on “ADD” on the right bottom of the window. Now this resolution I added to the system and can be chosen. Go back to “General Settings”(left top) , it will show the basic options and here you can now choose the 3840×2160 resolution and 60Hz.
